Mandarin Orange Pineapple Cake

Yum Yum Yummy. I love this cake. It's perfect for summer!






Recipe:
1 box yellow cake mix
1/2 cup oil
4 eggs
11 oz mandarin oranges with juice
1 tub Cool Whip(I use the XL one)
1 can crushed pineapple
1 box instant vanilla pudding
1. Mix oranges, eggs, oil and cake mix together and bake in 2 cake rounds at 350 for 20-25 minutes. Cool completely.
2. Mix remaining ingredients together and frost cake.
3. Eat leftover frosting.
4. Enjoy!

Oatmeal Raisin Cookie Pancakes

Who ever thought that these ingredients in pancakes, would make for a delicious breakfast!Mixed on the grill...

Definitely yummy and easy to make! I made them for Cornell and also when my parents were here last week. The recipe comes from another of my favorite baking blogs, "Joy the Baker."

CuPCaKeS

I made some yummy cupcakes last week...chocolate with cream cheese frosting and a caramel swirl. Since I'm just loving my new camera, you can see the step by step process...Lucky you *wink wink* :)

Start by making just your favorite basic chocolate cupcake(I cheated this time and used a box mix, but it sure didn't taste like it)...

Bake according to the recipe and let cool.


I made a cream cheese frosting and got it from "How to Eat a Cupcake" here(I love her blog).

It was so yummy.


Next, frost cooled cupcakes. I used a pastry bag with a decorators tip but you can just use a ziploc bag with the end cut off.
Then I just made up my own idea for the drizzled caramel. I melted some caramels with a little but of whipped cream to make them smoother.

Then drizzle the melted caramel on top of your frosting. Be prepared for a sticky mess!

Happy Birthday Jenna!

This weekend the beautiful Jenna T. had a birthday and I was lucky enough to be allowed to attend! Of course, I had to bake something...

I want S'MORE!

Yum Yum. I made the s'more bars yesterday that I have been wanting to make for weeks! I think I would definitely use more marshmallow fluff next time, I could hardly taste it with this batch. Peanut Butter Cup cookies in SC :)

I think my favorite area of our new house is the kitchen...so I of course couldn't wait to bake something! I have been dying to make s'more bars but when I consulted my hubby, he said, "No thanks, I won't eat those." So I stuck to something simple, cookies.

Got these at the grocery store today, I've never seen them so I figured it would be yummy to have a reeses cup cookie. I wasn't in the mood to research a recipe so I just used the one on the back of the bag.
They turned out, hmmm, just fine. Nothing great, but not bad either. I couldn't taste the full effect of the peanut butter cup, more just like a chocolate chip cookie.

Next baking session will be the s'more bars! I am hoping to have memories of campfires on Burntside Lake with these bars! haha..

OREoooooo

Who doesn't love an oreo? I mean seriously....anything cookies and cream goes over well in any crowd!

I made these cookie and cream cupcakes last weekend for our friends going-away party. There's an oreo cookie on the bottom, mixed in to the batter, and then in the whipped frosting. :)Got milk?
